When it comes to using food as medicine, fermented foods are at the very top of the list.

Incorporating fermented foods like sauerkraut into your daily routine is one of the most effective ways to modulate your gut microbiome, support immune function, lower systemic inflammation, and improve overall digestive health.

While store-bought sauerkraut is convenient, making your own at home allows you to control the quality of ingredients and experiment with vibrant, prebiotic add-ins like apples, root vegetables, citrus, and warm spices.

Here is a step-by-step guide to making two distinct, probiotic-packed batches of sauerkraut—one classic green and one festive spiced red cabbage!

Why Fermented Foods Power Your Gut Microbiome

Fermentation isn't just a traditional method of preserving food; it transforms plain cabbage into a supercharged probiotic powerhouse.

As natural, beneficial bacteria break down the sugars in cabbage, they produce lactic acid and active probiotics.

Adding fermented cabbage to your daily meals offers major functional health benefits:

  • Balances Gut Flora: Replenishes healthy bacteria in your digestive tract.

  • Supports Immune Function: Strengthens gut barrier integrity, where a vast portion of your immune system lives.

  • Reduces Systemic Inflammation: Protects against gastrointestinal distress and supports long-term metabolic health.

The Ideal Sauerkraut Salt Ratio

The secret to successful, safe sauerkraut fermentation lies in getting your salt ratio right.

Salt draws out the natural moisture from cabbage to create a protective, nutrient-rich brine. This brine keeps harmful oxygen-loving bacteria out while allowing beneficial lactobacilli to thrive.

Add 1 tablespoon of sea salt per 2 pounds of cabbage.

The Recipe: Dual-Batch Probiotic Sauerkraut

  • Prep time: 30 minutes

  • Fermentation time: 30 days

  • Yield: 3 large mason jars

Base Ingredients

  • Green Cabbage Batch: Approx. 12 lbs shredded green cabbage + 4 tbsp salt

  • Red Cabbage Batch: Approx. 6 lbs shredded red cabbage + 3 tbsp salt

Prebiotic Add-Ins & Spices

  • For Green Cabbage: Finely chopped celery, onions, diced apples, shredded rainbow carrots, and fennel seeds.

  • For Red Cabbage: Finely chopped fresh ginger, orange zest/pulp, diced apples, and shredded red carrots.

  • Spice Sachet (for Red Cabbage): Whole cloves and a broken cinnamon stick placed in a small cloth pouch.

Step-by-Step Instructions

1. Prep the Cabbage

Wash thoroughly and finely shred your cabbages into large mixing bowls.

Pro-tip: Before shredding, peel off and save a few clean outer leaves from each head to use as a top barrier inside your jars later.

2. Salt and Massage

Add the appropriate amount of sea salt to each bowl based on weight. Using clean hands, squeeze, mash, and massage the cabbage vigorously.

Work the salt in until the cabbage softens and releases a generous amount of natural brine. Let it rest for 30 minutes to release more juice.

3. Mix in Fruits, Veggies, and Spices

Add your prepared fruits, vegetables, and spices to their respective bowls. Massage the mixtures once more so the new flavors incorporate evenly into the cabbage and brine.

4. Pack the Jars

Pack the cabbage tightly into clean glass mason jars, pressing down firmly so the liquid rises above the vegetables.

For the red cabbage batch, nestle your spice sachet into the middle of the jar so it can infuse during fermentation.

5. Seal and Ferment

Place your reserved outer cabbage leaves and a glass fermentation weight on top of the cabbage to keep all ingredients fully submerged under the brine. Seal the jars using a fermentation lid (like the Easy Fermenter kit) and use a vacuum pump to extract oxygen from the jar.

Store at room temperature away from direct sunlight and let it ferment for 30 days.

The 30-Day Taste Test

After 30 days of fermentation, your homemade sauerkraut is ready to serve!

  • The Green Cabbage Batch: Offers a crisp, classic tangy crunch with warm herbal notes from the fennel seeds.

  • The Red Cabbage Batch: Delivers a cozy, autumn-inspired flavor profile thanks to the cinnamon, cloves, ginger, and citrus peel.

Add a spoonful of homemade sauerkraut to your daily meals, salads, or grain bowls to nourish your gut microbiome from the inside out.
